I had the unique experience of spending time with Paola at Gusto al Borgo. The unique setting of Casperia combined with locally grown, slow cook techniques inspired me to continue on the path of cooking and experimenting with Italian cuisine. The smells and tastes of fresh figs from the garden, tomatoes, basil, eggplant and locally grown meats all combined simply yet uniquely to preserve and enhance the original flavors. I have amazing memories making pizzas and bread…Drinking locally made wines. Eating Tiramisu and ice cream made by hand and simply delicious. I hope one day soon to return to Gusto Al Borgo and Casperia. Until then the smells and tastes of authentic Italian cuisine will live in my heart. James
